Peel and cut the red onion into small cubes in advance. Cut the carrots into strips or grate them on a coarse grater. Wash the rice and boil until half cooked. Wash the parsley and dill and chop finely. Prepare the pan and serving dish.
Prepare the base of the dish. Lightly fry the red onion in a frying pan with a little oil. Transfer the minced meat to a bowl, add onion, rice, egg, salt and pepper to taste, mix well.
Make the sauce. Fry the carrots in a frying pan with vegetable oil. Pour the tomato juice into a bowl. Add tomato paste, sour cream, fried carrots, flour, salt and pepper. Mix the ingredients thoroughly until the flour is completely dissolved. Add water to the sauce and stir again.
Put out the hedgehogs. Heat a frying pan with vegetable oil. Form balls from the prepared minced meat. Place them in a frying pan and pour the sauce over them. Cover the dish with a lid and wait until it boils. Then reduce the heat to low and simmer the hedgehogs for another 30 minutes.
Sprinkle the hedgehogs with chopped herbs and serve them to the table.
