Boil the water. Rinse rice and buckwheat with cold water first. Then distribute the cereals into two different bowls, pour boiling water over them and cover with a lid for 20 minutes. Peel the garlic and onion and chop. Wash and dry the lettuce leaves, grate the cheese on a medium grater. Prepare a meat grinder and baking dish.
Prepare the minced meat. Grind the minced meat through a meat grinder along with the garlic and onion pieces to form a homogeneous mixture. Salt and pepper the mixture to taste. Place the buckwheat and rice in a sieve to remove excess moisture. Then add the cereal to the minced meat and mix thoroughly.
Form hedgehogs. Make identical balls from the prepared minced meat. Pour vegetable oil into the bottom of the ceramic mold. Place the prepared hedgehogs on top. In a small container, mix tomato paste, sour cream and boiled water. Pour the resulting sauce over the dish.
Send the hedgehogs to bake. Cover the form with hedgehogs with a lid or foil. After that, put it in the oven for 30-40 minutes at 200 degrees. 10 minutes before cooking, remove the lid and bake the hedgehogs without it.
Before serving, place lettuce leaves on a plate. Place the prepared hedgehogs on top and sprinkle them with cheese.
