Peel the carrots and cut into strips or grate. Peel the onion and pepper, rinse and cut into strips. Wash the mushrooms. If you use shiitakes, first soak them in hot water for 2 hours. If you cook with oyster mushrooms, place them in the pan without pre-processing.
Cook broth with mushrooms. Place the mushrooms in a saucepan, add broth or water. Let the water boil and cook the mushrooms for 15 minutes.
Prepare the vegetables. Place the frying pan over medium heat and pour in the vegetable oil. Once hot, add carrots, onions and bell peppers. Fry for about 5 minutes. Then pour in soy sauce and add ginger. Reduce heat to low and simmer vegetables for 10 minutes.
Boil the noodles. Follow the instructions on the noodle package. Typically, wheat or egg noodles are cooked for 7-10 minutes in boiling water. You can add soy sauce or other spices to taste during the cooking process.
Boil the soup ingredients. Place fried vegetables and prepared noodles in a saucepan with mushrooms. Simmer everything together for about 5 more minutes. Next, turn off the heat.
Serve the ramen hot, sprinkled with chopped fresh herbs and sesame seeds on top. Traditionally, ramen is eaten with chopsticks, and a specially shaped porcelain or earthenware spoon is also served for the broth.
