Peel the onion, wash and cut into small pieces. Rinse the carrots, peel and grate on a medium or fine grater. Rinse the rice thoroughly under cold water. Wash the parsley and chop finely. Wash cucumbers and tomatoes to serve. Prepare two clay pots.
Make the base for the hedgehogs. Transfer the minced meat into a deep bowl. Add onions and carrots to it, then salt with Georgian herbs, mix thoroughly. At the end, add rice to the minced meat and mix again.
Prepare the hedgehogs. Add some water to the bottom of the pots. Then form balls of the same size from the meat base and place them on the bottom of the containers. When the first layer is ready, sprinkle it with parsley. Then sprinkle each subsequent layer with herbs. Finally, pour tomato juice over the hedgehogs. Place the hedgehogs in the oven for 1.5 hours at 200 degrees.
Serve fragrant hedgehogs to the table along with a vegetable side dish. To do this, cut the cucumbers and tomatoes into several parts. Sprinkle them lightly with salt if desired.
