Boil meat broth or defrost meat broth. Place the minced meat in a container convenient for you, boil water in a kettle, measure and rinse the required amount of rice. Take out the sauerkraut and soak it in a little water. List all products according to the list of ingredients. Peel and rinse the onions and carrots. Prepare the dishes you will use.
Pour boiling water over the washed rice, cover with a lid and leave for 10-15 minutes.
Cut the onions into small cubes, grate the carrots on a coarse grater. Heat a frying pan, pour in vegetable oil and add chopped onions and carrots. Stew the vegetables over medium heat, stir for 3-4 minutes, cool this sauté.
Add our fried onions and carrots to the minced meat. Drain all excess water from the rice and also add the rice to the minced meat. Salt and pepper the minced meat to your taste, you can also add your favorite aromatic seasonings, mix all the ingredients well and our main stuffing for cabbage rolls is ready.
Disassemble the sauerkraut into leaves, cut out the thick parts from each leaf and divide each cabbage leaf into 2 parts.
Place 2-3 tbsp on each cabbage leaf. our prepared minced meat, roll each cabbage leaf into the shape of a small envelope. Roll all the minced meat into cabbage leaves. Place the prepared cabbage rolls in a casserole with a thick bottom.
In a bowl, mix sour cream, tomato paste, meat broth, salt and pepper. Pour the mixture over the cabbage rolls so that the cabbage rolls protrude no more than 2-3 cm above the sauce. Place the cauldron over high heat and bring to a boil, then reduce the heat to low and cover with a lid, simmer the sauerkraut cabbage rolls until fully cooked, about 60 - 90 minutes.
Serve cabbage rolls made from sauerkraut and minced meat hot with fresh sour cream.
