Sift the flour through a sieve or break up the lumps in it with a blender. Peel the potatoes, wash them and cut them into thin slices. Peel, wash and finely chop the onion. Grate the cheese. Preheat the oven to 180 degrees.
Make the dough. Pour flour, dry yeast, salt, sugar into a deep container. Stir and add warm water. Knead the dough, gradually adding flour until the dough stops sticking to your hands. Place the dough back into the bowl and cover with a towel. Let rise in a warm place for about 1 hour.
Prepare the filling. Place finely chopped onion, grated cheese in a bowl with minced meat, add salt and pepper to taste. Mix well. Place potato mugs, salt in a separate bowl and stir.
Form a pie with potatoes and minced meat. Grease a baking dish with vegetable oil. Divide the dough into 2 unequal parts. Roll out one part to the size of the baking dish, the second - a little larger. Place the larger rolled out part on the bottom of the mold and add the filling. Distribute evenly and cover with a second layer of dough. Bring the edges of the pie together and use a fork to poke a few holes. Beat the eggs in a bowl with a fork or whisk and brush the surface of the pie. Let the pie sit for 10 minutes.
Prepare potato mince pie. Place the pie pan in an oven preheated to 180 degrees and bake for 40 minutes. Check the readiness of the pie with a wooden stick.
Cut the pie into portions and serve with hot chicken broth.
