Steps:


  1. 2 hours before cooking, remove the beef from the refrigerator to allow it to come to room temperature. Wash the vegetables and cut into large pieces.

  2. Mix olive oil, thyme, crushed garlic, dried mint and oregano, salt and ground black pepper in one bowl.

  3. Place the meat in a baking container and rub with the resulting mixture of oil and spices.

  4. Place pre-chopped vegetables around the meat so that it is saturated with juices during baking.

  5. Place the meat and vegetables in a preheated oven and cook for 2.5 hours at 180 °C.

  6. 15 minutes before cooking, remove the foil or lid to give the meat a crust.

  7. Cut the meat into pieces and place on a plate, sprinkle with fresh herbs if desired.
