Rinse the meat under running water and dry with paper towels. Wash the apples and quinces. Open the jars of soy sauce, honey and mustard. Measure out the required amount of oil and spices.
In a deep bowl, mix honey, paprika, mustard, pepper mixture, lemon juice, soy sauce and oil. Mix everything well.
Cut the ribs into pieces, bone by bone. Pour your marinade into the ribs. Mix well and leave to marinate overnight.
Cut the quince and apples into 4 parts. Grease a baking dish with oil and place the fruit in it. Place the ribs on them.
Preheat the oven to 180 degrees. Place the meat in the oven for an hour and a half, covering with foil.
Serve the meat with apples soaked in juices, fresh vegetables and herbs.
