Rack of pork ribs
Swins of the solids are part of the carcass of pigs from the muscle layer, ribs and a certain amount of fat. Depending on the carcass section from which they are cut out, two types of ribs are distinguished - more fleshy, removed from the side of the back and less fleshy, but more oily, removed from the side of the chest. The latter are often sold in the form of a solid strip of ribs.
