Rinse the rice and boil until half cooked. Peel the onion, rinse and cut: half the onion finely, the other part into half rings. Wash the carrots, peel them, and then grate them on a fine grater. Take out the foil and baking dish.
Combine foods for hedgehogs. Transfer the minced meat into a deep bowl. Break one egg there, add half of the Adyghe salt, mix. Then add rice to the meat, as well as vegetables - finely chopped half an onion and one grated carrot. Mix thoroughly again. After this, form small balls from the finished base and set them aside.
Make the sauce. Combine sour cream and tomato juice. Pour water in there and stir. Add the remaining Adyghe salt, then stir again until the mixture becomes homogeneous
Prepare the hedgehogs. Turn on the oven to preheat to 180 degrees. Place the coarsely chopped half of the onion and the second grated carrot on the bottom of the mold. Distribute the finished balls on top, pressing them tightly against each other. Then pour the sauce into the dish. Cover the pan with foil and then place in the oven for 35-40 minutes. 15 minutes before cooking, remove the foil.
Serve the finished hedgehogs hot. Place mashed potatoes in the center of the plate. Place the hedgehogs on top and pour the sauce over everything.
