Remove from the refrigerator and leave the butter on the counter for half an hour until it becomes soft. This is how it should be for the correct cooking process. Wash and peel the apricots. Sift the flour.
Take a mixing bowl and pour sugar into it, add butter and mix until smooth. Add flour, baking powder and salt to the resulting mass and knead the dough. The lump should be homogeneous and soft, not stick to your hands.
Prepare a baking dish with a diameter of about 20 - 22 centimeters. Distribute the dough evenly over the bottom and sides, the height at the edges should be approximately 3-4 centimeters. Place the mold in the refrigerator.
Mix the filling by combining cottage cheese, eggs, sugar, cinnamon and lemon zest. First mix all the ingredients with a spatula, and then beat with a mixer for about 1-2 minutes.
Transfer the filling into the dough pan. Cut the apricots into slices, place them beautifully on top of the curd mass and press lightly into it. Preheat the oven to 160°C and bake for approximately 1.5 hours. The pie should have a beautiful golden brown crust. Cut it after it has completely cooled to preserve its beautiful appearance and the piece does not lose its shape.
A portion of the pie will look beautiful on a plain white plate decorated with apricot slices. This will make the dish brighter and more attractive.
