Wash the zucchini and bell pepper, peel and cut into small cubes. Peel, wash and chop the garlic cloves. Grate the cheese. Wash and dry the parsley, and separate the leaves from the sprig for serving. Preheat the oven to 200 degrees.
Toast the baguette. Cut the baguette into slices and fry in a hot dry frying pan on both sides until golden brown.
Place vegetables on baguette. In a small bowl, combine minced garlic, salt and ground pepper. Brush the mixture onto the baguette pieces. Carefully place vegetable cubes on top and sprinkle with grated cheese.
Bake the baguette. Place the prepared baguette pieces on a baking sheet and place in a preheated oven for 15 minutes.
Make the sauce. Grind the parsley in a blender, add salt, Italian herbs and olive oil. Let the baguette pieces sit out of the oven for 5 minutes and pour the sauce over them.
Before serving, decorate the baguette with vegetables with parsley leaves.
