Rinse the meat under running water and be sure to pat dry with a paper towel to remove excess moisture. Peel the onion. Peel the pineapple and cut into rings.
Cut the meat into equal sized pieces. Beat the pieces of meat well with a hammer. Season the chopped pieces with salt and pepper to taste. Cut the onions and tomatoes into slices.
Proceed to place the ingredients in the baking dish. Place the fillet pieces in the first layer. Cover the meat with onion rings.
Spread mayonnaise on top. Place tomato slices on top. Cover the tomatoes with pineapple slices.
Sprinkle grated cheese on top. Place the pan in an oven preheated to 200°C for 30-40 minutes.
Garnish the finished dish with herbs and serve with fresh vegetables.
