Scrape the lard on all sides with a knife to remove any debris. Cut into pieces approximately 8 by 8 cm. Peel the garlic and cut into small slices. Prepare a large jar suitable for pickling.
Mix salt with mustard and lard seasoning. Rub the pieces of lard with this mixture on all sides, sparingly. Pour a little mixture of salt, mustard, seasoning into the bottom of the jar and apply lard tightly. Sprinkle each layer with peppercorns, bay leaves and garlic pieces. Close the jar with a nylon lid and put it in the refrigerator for 2 weeks.
Serve lard, salted with mustard, thinly sliced on a plate as an appetizer. This snack is ideal with strong drinks.
