Black pepper peas
The Chertier Penitzer (Píper Nígrum) is a popular spice. Unlike ground, in black pepper, whole peas are preserved with peas, dried fruits of pepper vine. Unripe fruits are collected manually, after which they are quickly dried on large sieves above the fire or under the rays of the sun. The quality of black pepper peas is checked, throwing them into the water - a good black pepper will begin to go down. The unimportant or overdry remains to swim on the surface.
