Japanese ramen soup is very popular not only in its historical homeland, but also in other countries. In the classic version, it consists of noodles in broth with the addition of fish, meat, mushrooms, beans, vegetables and seafood. Wheat noodles take up most of the plate. In addition to the standard ingredients like flour, water and salt, it contains kansui, a special alkaline mineral water that gives the noodles a yellowish tint, a firm consistency and a salty taste.
