Heat the water, it should be warm, but not hot. Sift the flour.
In a bowl, dilute the yeast with sugar and ¼ part of water, from the amount indicated above. Add 1 tbsp. flour and stir.
add the rest of the flour, pour in half the remaining water and start kneading. Dissolve the salt in the other half of the water and pour into the dough. Knead the dough by hand or using a mixer fitted with the dough attachment for 5 minutes.
Cover the finished dough with cling film or a towel and leave to rise in a warm place for 1 hour. Tear off a sheet of parchment the size of a baking sheet and brush with olive oil. When the dough has risen, knead it with your hands on the parchment. Cover again with film and leave for another 1 hour.
After an hour, transfer the parchment to a baking sheet. Remove the film, cut the dough crosswise, and then into thin strips 1 cm thick. Sprinkle with spices and place in an oven preheated to 200 °C for 12-15 minutes.
Tie a serving of breadsticks with ribbon or kitchen string and serve with cheese sauce.
