Sweet pumpkin, bell peppers, carrots, onions and potatoes baked in the oven are a great dish for lunch or dinner. It takes time to prepare, but very little effort. Simply chop all the ingredients, place in a baking dish, season with salt and pepper and pop into the oven. While the vegetables are cooking, you can go about your business or cook something else.
