Prepare the necessary products and place them conveniently on your desktop. Remove the butter in advance so it has time to soften. Prepare a mixer, gingerbread molds, baking sheet and parchment paper. Turn the oven on 180 degrees.
Prepare the dough. Mix flour with baking powder and spices. Sift the resulting mixture into a spacious container so that it is enriched with oxygen. Beat the egg, yolk, salt and sugar with a whisk, pour in honey and sour cream, mix. Add butter and lemon zest and beat a little. Add flour mixed with spices and baking powder. The dough should be soft and almost not sticky to your hands. Wrap the dough in cling film and put it in the refrigerator for half an hour.
Shape and bake the gingerbread cookies. Lightly sprinkle the table with flour. Roll out the dough and cut out the gingerbread cookies using cutters. Gather the scraps into a bun and roll them out again. Cover a baking sheet with parchment paper and place the pieces on it. Bake the sweets in an oven preheated to 180 degrees. This will take approximately 25 minutes.
Prepare the glaze. Using a mixer, beat the egg whites and powdered sugar. You should get a homogeneous smooth mass. Add lemon juice. Cover the baked goods with the prepared glaze.
Gingerbread cookies will look especially festive if they are additionally decorated with confectionery sprinkles.
