Cut a piece of cheese and place it on a plate along with herbs and dry garlic. Pour the salt into a container, and place the mayonnaise in a deep container. Place the fish on the table.
Clean the fish and cut off its head and tail. Separate both fillets on the skin and rinse with water. Season with salt on both sides. Grate the cheese and add chopped herbs, garlic, mayonnaise and mix. Place foil on a baking sheet and grease it with oil. Place the fillets, skin side down, and top with the herb mixture. Bake the fish for 20 minutes at 180°C.
Place the fish on a flat plate and garnish it with vegetables.
