Halloumi is a Levantine cheese made from a mixture of goat and sheep milk. Sometimes it may contain cow's milk. Somewhat reminiscent of mozzarella cheese, but quite salty. Very often mint is added to cheese, which enhances the taste and also increases shelf life. This cheese can not only be eaten fresh, but also fried until golden brown. Halloumi does not melt when fried high, which allows it to be added to salads, as in our recipe.
