Rinse chicken, tomatoes and herbs in cold water and dry with paper towels. If necessary, remove the skin from the chicken.
Cut the tomatoes into thin slices and slice the cheese. Make several equal cross cuts in the top of the chicken breast. Separately, mix olive oil and dried basil in a bowl and let sit for a while.
Cover a baking sheet with foil. Place the chicken on top and insert the tomato and cheese into the slits. Pour the resulting dressing over everything and bake at 180℃ for 40 minutes. Then remove from the oven, wrap in foil and let sit for another 15 minutes.
Serve the finished chicken with Caprese cut into small pieces. If desired, you can garnish the serving with fresh mint or other aromatic herbs.
