Sift the flour into a separate bowl and combine with soda.
In a deep bowl, mix salt, egg and sugar. Pour in kefir. Mix everything well with a whisk. Then add the flour mixture. Mix the dough thoroughly and do not stir again. Leave to stand for 30 minutes.
Once bubbles have formed on the surface of the dough, start frying. Fry the pancakes in a hot frying pan with vegetable oil for 5 minutes on each side. Place the finished pancakes on a paper towel to remove excess oil.
Serve the pancakes warm with natural yogurt, sour cream or jam.
