If necessary, pluck the duck, wash it, cut off the tail and fat around it.
Mix all the marinade ingredients, cut the oranges into quarters, squeeze the juice into the marinade and put the peel there.
Place the duck in the marinade, coat well, cover with foil and leave for 12-15 hours.
Remove the duck from the marinade, shake off the spices, place orange peels inside the duck so that air can circulate there. Place foil or parchment on a baking sheet in 2 layers, with duck on top. Cook in the oven for an hour at 200°C.
Prepare the filling separately. Cut the apple into medium cubes, carrots into 4-5cm strips. Onion in half rings. Fry everything in butter in a frying pan until done, periodically adding duck marinade, just not too much.
Remove the duck from the oven, remove the oranges and stuff it with apples. Brush with marinade again. Wrap the tips of the wings and drumsticks in foil. Bake for another hour until done.
