Lay out all the ingredients in front of you. Wash and peel the vegetables.
Sift the flour and make a well. Beat the eggs into this hole, add salt and water. Knead a stiff dough. Refrigerate for 30 minutes.
Sauté chopped vegetables in vegetable oil.
Roll out the dough thinly and cut the noodles. Boil in boiling water for 2 minutes.
Add to vegetables and fry until done.
Sprinkle with herbs before serving. You can add cheese if you wish.
