Prepare the necessary products. Wash the pork and dry it on paper towels. Peel the garlic. Wash and dry the cilantro and lime for serving. Cut the cilantro coarsely, the lime into thin slices. Prepare a coffee grinder or mortar.
Prepare the spice mixture. Finely chop the garlic. Grind the coriander and cumin seeds not very finely using a coffee grinder or mortar. Combine spices with 1 tbsp. l. olive oil and mix well.
Prepare the chops. Beat the pieces of meat on both sides, rub with ground black pepper, salt and spread well with a mixture of spices.
Fry the meat. Turn on medium-high heat and heat the frying pan with the oil until it starts to sizzle. Place the meat and fry on each side for 5-7 minutes.
Place the coriander chops on serving plates, sprinkle with cilantro and garnish with lime wedges.
