Wash the pork fillet and cut it across the grain into pieces 1.5 cm thick. Then place the meat on a work surface, cover it with cling film and beat it with a kitchen hammer. Wash the apples, remove the core and cut into slices. Heat the water to a temperature of 50-60 degrees. To prepare the dish, take a baking dish and a saucepan.
Bake meat with apples. Season the chops with salt and pepper on both sides and set aside for 5-10 minutes. Preheat the oven to 180 degrees and grease a baking dish with vegetable oil. Then place the apple slices in it and place the chops on top. Cover the dish with foil and place it in the oven for 30 minutes.
Make the sauce. Stir honey in warm water. Place the mixture on the fire and bring it to a boil. Cook briefly until the sauce thickens, then remove from heat and cool. Then pour lemon juice and cognac into the sauce and stir. When the chops are cooked, remove the foil, pour honey sauce over them and place in the oven for another 5 minutes.
Serve the flavorful chops immediately after cooking. If desired, add a light side dish to the meat: vegetable salad, rice or potatoes.
