Pork fillet
Pig fillet is pork meat, which, in comparison with its other parts, contains the least fat. This delicate meat is also called "lean." The best fillet is obtained from the tenderloin, followed by a carbonade fillet (the bore of the Korea). Also, the upper layer of the horn of the hind legs, the most juicy and the most fleshy. The word “fillet” is a tracing paper from the French Filet - “a piece of meat with a fibrous structure”, and goes back to the French fil - “thread”, “fiber”.
