Rinse the pork thoroughly with cold water and pat dry with a paper towel or napkin. Wash the vegetables, peel the onions and carrots.
Cut the prepared pork into medium-sized cubes, up to 5 cm. It is with this cutting that it cooks quickly, and at the same time does not dry out. Salt, pepper, add a small amount of sunflower oil and leave for a few minutes to marinate.
Place the frying pan on the fire and heat it well. Add the marinated pork and fry over high heat for 10 minutes, stirring constantly, until the surface of the meat turns white. Reduce heat, pour in half a glass of water, close the lid tightly and simmer for 30 minutes.
Cut the carrots into thin strips, the onions into half rings, the cucumbers into rings no more than a centimeter thick. Add chopped vegetables to the pan and fry them over high heat until soft. Add tomato sauce, seasonings and mix thoroughly. Cover with a lid and simmer for 5 minutes over low heat.
Serve the pork hot as a meal on its own. Depending on your desire, you can serve it on a common platter, or you can serve it in portions, garnished with fresh parsley.
