Peel the onions and carrots, rinse and cut into small cubes. Rinse the meat and cut into large pieces. Remove the seeds and tails from the sweet pepper, wash it and cut into small cubes. Wash the tomatoes and cut into cubes. Peel the garlic, cut into thin slices. Remove seeds from chili peppers and cut into small slices. Peel the potatoes and rinse them.
Place onion in a frying pan heated with vegetable oil, fry for 3-4 minutes, then add meat, paprika and ground red pepper, stir. Fry everything over high heat for 3 minutes, then reduce the heat and simmer under a closed lid for about 1 hour.
Then add chopped carrots, bell peppers, garlic, chili peppers, and tomatoes to the meat. Add salt and pepper to taste, stir.
Cut the potatoes into large cubes and add to the meat and vegetables, stir. If the vegetables have released little liquid, you can add a glass of water to the potatoes. Simmer with the lid closed for another 20 minutes until done.
Serve potatoes stewed with beef and bell peppers hot, seasoned with sour cream or mayonnaise and garnished with fresh herbs. You can also prepare a salad of fresh vegetables or light snacks of eggs and cheese for this dish.
