Rinse turkey fillet under cold water. Prepare your meat grinder. Select and conveniently arrange all the necessary ingredients for the dish on the work surface.
In a meat grinder, grind turkey meat, bacon, garlic and parsley to obtain minced meat. Add salt and 1 egg white to the minced meat and knead well. If necessary, grind the minced meat again to obtain a smooth texture.
Boil quail eggs in a bag for 1.5 minutes, place them in cold water and let cool completely. Under running water, carefully peel the eggs from the shell and dry them.
Divide the finished minced meat into 6 equal balls of 35-40 g each and turn them into a “pancake” with your hand. Wrap the egg completely into each “pancake” and roll the meat ball in flour. Repeat with each egg.
Beat 2 eggs for breading, prepare containers for breading and a saucepan with frying oil.
Dip the floured eggs alternately into the beaten egg, then into the panko breading, then back into the egg and back into the breading.
Deep fry the prepared eggs at 180 degrees until golden brown.
