Check all required ingredients and work surface. Wash the vegetables and dry with a paper towel.
Place clean and dry jars and lids in a cold oven, turn on the oven to preheat to 120 ⁰C and turn it off after 13-15 minutes.
Peel the stalk and cut into slices. Remove the stem and seeds from the bell pepper and cut into rings. Cut the onion into rings too.
Place salt, pepper, and parsley on the bottom of a serving jar.
Place tomatoes, bell peppers, onions, garlic and bay leaves in a jar.
Pour boiling water over the vegetables. Let the preparation brew for 2-3 days in a cool, dark place. Bon appetit!
Serve tomatoes sprinkled with finely chopped fresh herbs as a side dish for hot dishes.
