Wash and peel the vegetables. Cut the onion into half rings, chop the celery and garlic, and grate the carrots into thin strips. Cut the mozzarella into slices.
Fry the onion, garlic, carrots and celery until the onion turns golden. This will take approximately 10 minutes. Transfer vegetables to a plate. Add minced meat, chili pepper and oregano to the same pan. Fry for 5 minutes until characteristic brown color.
Place the fried vegetables in the frying pan with the minced meat. Add tomato paste, tomatoes in their own juice, oregano and sugar. Pour in water and mix thoroughly. Simmer the sauce for 45 minutes without a lid.
While the sauce is simmering, cook the gnocchi according to package instructions. When the sauce is ready, add the gnocchi to it and stir gently. Place mozzarella on top and place in the oven for 5 minutes until the cheese melts.
Serve the gnocchi with bolognese hot.
