Prepare your ingredients. Pre-soak the raisins in a bowl. To do this, pour hot water into a bowl and add raisins there. Wait 10-15 minutes until the raisins are soft. After this, drain the water. If you have grain curd, you should grind it in a blender or with a fork. You can take ready-made curd mass.
Prepare the “dough” for cheesecakes. Place cottage cheese, egg, a little salt and vanilla, and raisins in a deep bowl. Mix everything well. Next, gradually add the sifted flour and stir each time until smooth. Depending on the cottage cheese, you may need a little less or more flour. Keep an eye on how the dough turns out. It should stick to your hands just a little, but not be too dense and clogged with flour.
Sprinkle a table or board with flour and transfer the resulting mass there. Roll the dough into a sausage with a diameter of approximately 4-5 cm. Roll in flour on all sides. Cut the block into equal circles approximately 2 cm thick.
Sprinkle each cheesecake with a little flour. Pour oil into a frying pan and put on fire. Wait until the oil gets hot. Fry the cheesecakes over medium heat for 3-5 minutes on each side. Make sure they turn out rosy and golden.
Before serving, top the cheesecakes with strawberry jam. Garnish with almonds and berries.
