Wash the apple and carefully peel it. Wash the eggs and separate the yolks from the whites. Prepare a mixer, a saucepan, a frying pan and a form for freezing the ice cream.
Prepare the ice cream base. Mix milk with yolks, add sugar. Mix thoroughly and beat until smooth. Place over medium heat and cook, stirring, until the mixture thickens. In a separate container, whip the cream to the consistency of sour cream.
Prepare applesauce. Cut the peeled apple into small pieces. Melt the butter in a frying pan. Add sugar there and wait until it melts. Cook the apple over low heat, stirring regularly until softened, for 10 minutes. Add vanilla sugar and stir.
Prepare the ice cream. Mix ice cream base with whipped cream and add caramelized apples. Blend everything thoroughly with a blender. Place the resulting apple ice cream in a mold and place in the freezer for 4 hours. Serve by placing ice cream in bowls.
Garnish the applesauce sundae with cinnamon. This can be done using a kitchen strainer, then the cinnamon will be distributed evenly over the surface of the ice cream.
