Prepare the vegetables: wash, peel, cut into small cubes of approximately the same size. If you want to prepare homogeneous caviar using a blender, you can cut it randomly, but not too coarsely.
Place the onion in a frying pan with heated vegetable oil, fry for a minute, then, at intervals of about 1 minute, add the rest of the vegetables: carrots, peppers, eggplants. Fry everything together for 10 minutes.
When the vegetables are soft, add tomato paste, garlic, lemon juice, sugar, salt and pepper to taste.
After 5 minutes of frying, pour in a little (200 ml) water, simmer everything together until fully cooked. The caviar is ready.
This caviar can be served hot or cold, on toasted crispy toast with your favorite herbs.
