Weigh the required amount of flour, ricotta, butter, sugar and measure out the milk.
Mix flour with eggs and knead the dough. For an elastic structure, knead it for 10 minutes. After this, set aside to rest for 7-10 minutes.
Place the ricotta on a plate, add sugar and vanilla. Stir well.
Roll out the dough thinly into one large layer, use a glass to squeeze circles into it, put the filling in each and pinch the edges. Place the ravioli in boiling water and cook for 7-10 minutes.
Prepare the sauce in a saucepan. Add butter, sugar, a little nutmeg, 30 g of flour and milk. Mix everything, cook over low heat until the mixture thickens.
Place ravioli on a plate. Top them with sauce. Give it a nice bright color if you wish. Arrange seasonal berries in a circle - raspberries, strawberries or blackberries.
