Wash the cherry tomatoes. Prepare the remaining ingredients.
Cut the cherry tomatoes into quarters and place in a salad bowl. Cut half the avocado, peel and remove the pit. Cut the avocado into cubes and place in a salad bowl.
Prepare the dressing. To do this, mix honey, soy sauce, lemon juice and Dijon mustard until smooth.
Rinse the quinoa with cold water and then drain in a sieve. Pour cold water over the quinoa in a 1:2 ratio and add a little salt. Place the pot of quinoa on the stove and bring the water to a boil. Cover the quinoa with a lid and cook until tender over low heat for 10-15 minutes.
Add the finished quinoa to the cherry tomatoes and avocado. Dress the salad. Add chopped iceberg lettuce and toss to coat. Quinoa salad is ready. Bon appetit!
