Wash the eggs and separate the yolks from the whites. To grind almonds and mix the ice cream, prepare a blender, and to beat egg yolks, a mixer and a deep container. To freeze the ice cream, prepare a container with a lid. For serving - bowls and a special ice cream spoon.
Prepare your ingredients. Mix cream and milk in a small saucepan. Beat the egg yolks and sugar with a mixer in a deep bowl until smooth. Break the milk chocolate into small pieces. Grind the almonds in a blender or chop them into coarse crumbs with a knife.
Prepare the ice cream. Place the saucepan with milk and cream over medium heat and heat, but do not boil. Reduce heat, add chocolate pieces to the mixture and stir with a whisk until the chocolate is completely dissolved. Pour the beaten yolks with sugar into the creamy chocolate mixture. Stirring constantly, bring to a boil over low heat and immediately remove from heat.
Freeze the ice cream. Add crushed almonds to the mixture and mix well. Place the ice cream in a convenient container, close the lid and put it in the freezer for 2-3 hours. Then take out the ice cream, transfer it to a blender, mix at low speed, return the mixture to the container, close the lid and put it in the freezer for 4-5 hours.
Using a special spoon, place three balls of the finished milk chocolate ice cream into the bowls. Decorate each ball with 2-3 frozen cherries.
