Peel and wash the potatoes, peel the carrots and onions, rinse the greens.
Grate the carrots on a coarse grater, cut the onion into small cubes. Place the chopped vegetables in a frying pan heated with oil and fry until soft for 5-7 minutes.
Cut the peeled potatoes into medium cubes, add to the fried vegetables and cover with water. Stir, salt and pepper. Leave to simmer over low heat for about 30 minutes until the potatoes are done.
Sprinkle home-style aromatic stewed potatoes with carrots and onions with finely chopped herbs and serve with sour cream.
