Stewed potatoes are a hearty, aromatic and appetizing dish that takes no longer to prepare than an hour. We supplemented the potatoes with carrots and onions, but you can use tomatoes, zucchini, eggplant and cabbage. The result is a vegetable stew that is perfect for lunch.

Steps:


  1. Peel and wash the potatoes, peel the carrots and onions, rinse the greens.

  2. Grate the carrots on a coarse grater, cut the onion into small cubes. Place the chopped vegetables in a frying pan heated with oil and fry until soft for 5-7 minutes.

  3. Cut the peeled potatoes into medium cubes, add to the fried vegetables and cover with water. Stir, salt and pepper. Leave to simmer over low heat for about 30 minutes until the potatoes are done.
