Galician pie, or Santiago pie, is a popular dish in northwestern Spain - Galicia. The baked goods are made from almonds, which must be ground into flour. In the classic version of serving, the cake is sprinkled with powdered sugar through a stencil to create the Galician Cross of St. James (Cross of Santiago), resembling a sword with a hilt and blade in the shape of a flower.

Steps:


  1. Pour boiling water over the almonds for 10-15 minutes, remove the husks, and dry the nuts well. Grate the lemon zest on a fine grater.

  2. Pour the almonds into a blender bowl and grind until coarse. In a separate bowl, beat the eggs with a fork, add sugar, and mix well.

  3. When the egg-sugar mixture becomes creamy, add liqueur. Add the zest. While gently stirring the mixture, add the almonds. Preheat the oven to 180ºC.

  4. Grease a baking dish with vegetable oil and line with parchment paper. Pour the dough, place in a preheated oven, cook for 25-30 minutes.

  5. Serve Galician pie with tea. Sprinkle powdered sugar and coconut on top.
