Steps:


  1. If you are using frozen lingonberries, take them out to defrost first. If you have fresh lingonberries, clean them of any visible debris, rinse and dry them with paper towels. Prepare meat and spices.

  2. Wash and prepare the pork for roasting, cut into four equal pieces. Peel the garlic, rinse it and grind it through a blender or grater.

  3. Mash the lingonberries in a small form, add chopped garlic, salt and pepper.

  4. Using a sharp knife, pierce the pork and make small cuts all over. Spread the resulting sauce generously over the pork and wrap with foil.

  5. Place the pork in an oven preheated to 220°C for 15 minutes, then reduce the temperature to 170°C and bake for 90 minutes.

  6. Serve the pork with fresh vegetables, generously drizzle with lingonberry sauce and add bright herbs.
