Peel and rinse the vegetables. Cut the onion into thin half rings. Cut the potatoes and sweet peppers into strips.
Heat vegetable oil in a frying pan. Add potatoes and cook over medium heat until soft, about 7 minutes.
Add peppers and onions to the pan, stir and fry along with the potatoes for 1-2 minutes. Add salt to taste and stir. Beat the eggs into the pan, add salt and cook until the eggs are done, covering with a lid.
Serve scrambled eggs with potatoes, garnished with herbs. Dry the bread lightly in a frying pan and serve with the dish.
