Steps:

  1. Rinse the barley thoroughly several times until the water runs clear. Also rinse dried fruits in cold water and let dry. Chop the walnuts using a kitchen hammer or knife. Boil water in a kettle.

  2. Pour the washed barley grains with water and bring to a boil over medium heat. Season with salt to taste, reduce heat to high and cook for about 40 minutes.

  3. Pour boiling water over the washed dried fruits several times; if they are very hard, then put them in hot water for 2-3 minutes to soften them. Cut into small pieces.

  4. Place the finished barley in a colander, drain the water and rinse the grains well in cold water. Mix thoroughly, the consistency of the porridge should be crumbly. In a deep bowl, mix all the ingredients: boiled barley grains, poppy seeds, chopped dried fruits, nuts, honey and sugar.

  5. Traditionally, kutya is served as an independent dish with homemade dried fruit compote. There are 2 options: pour compote over the kutia and eat it as a sweet soup, or simply wash down the barley porridge with compote.
