Cool the eggs as needed, then separate them into yolks and whites. Then beat the whites separately until they form a slight foam, as the foam develops, add gelatin and pour in all 40 ml of warm water, set the mixture aside for 1-2 minutes.
Add another 40 ml of water to the resulting mixture and mix thoroughly. Add the egg whites and vanilla, mix everything, beat the contents for about 2-3 minutes, then lightly add gelatin and mix until smooth.
When ready, add vanillin and beat for 1 minute, then pour the resulting mass into the mold and refrigerate for 2 hours.
Sprinkle with coconut flakes to make the marshmallows look more colorful and appetizing.
