Remove the eggs from the refrigerator, wash and dry. Wash the fruits and cut into small pieces. Cut the vanilla pod lengthwise and remove the seeds. Prepare a blender, mold and food foil.
Prepare egg yolk cream. Carefully separate the yolks from the whites. Add powdered sugar and vanilla to the yolks. Beat until a homogeneous air mass is formed.
Start preparing the parfait. In a separate container, beat the cream until thick, add the yolks to it. Sprinkle egg whites with lemon juice and beat. Then add them to the creamy yolk cream and mix gently.
Finish preparing the dessert. Cover the bowl with foil, grease it with oil, and spread the mixture evenly. Carefully fold the edges of the foil over to seal the parfait tightly. Place the mold in the refrigerator for 6 hours.
10 minutes before serving, remove the parfait from the refrigerator, remove the foil, wet a knife with water and cut the dessert into pieces. Place on plates. Garnish the treat with pieces of seasonal fruit.
