Quince with black currant is an unusual dessert in which sour berries are perfectly combined with sweetish fruit. Interestingly, quince resembles a pear or an apple, but its taste is less sweet, or rather, it is less edible in its raw form. It is for this reason that it is subjected to heat treatment, after which the fruit acquires a pleasantly astringent, sweetish taste. By the way, if desired, currants can be replaced with other berries - for example, cherries or cranberries.
