Brynza is a popular brine cheese prepared from pasteurized, usually sheep, milk. Cheese ripens in wooden barrels. The word came to the Russian language from Ukrainian, and in Ukrainian it was borrowed from the Hungarian language, where Brinza means "sheep cheese."
