Pork shank
Pork red - a semi -finished product of pork carcass, part of the pork ham, adjacent to the knee joint. It consists mainly of gross muscles and connective tissue, covered with a thick layer of fat. The posterior shank contains more meat, so it goes to the second dishes. The front is often used for soups and cold weather. After prolonged heat treatment, the product acquires a delicate meat taste and a delicious fragrant smell.
