The cheese is dorb
Dorban is a German soft cheese made of cow's milk, pierced by the veins of the noble blue mold. This type of natural mold is called Penicillium RoqueForti, as part of the cheese it acquires a greenish-blue or blue-black color. Dorg is appreciated for a more restrained taste and smell in comparison with related cheeses. It is eaten as an independent dish, combined with nuts, honey, pears, white meat, sweet wines.
